The obvious choice for the feature recipe in the ground beef category would be a beef burger.  But there are so many outstanding recipes it is hard to choose one.  Instead we would like to give you the basics to another favorite ground beef recipe.

Chili
- It is made totally from scratch with no added preservatives in any way.  The ground beef can also be substituted with ground lamb (which is especially neutral for people suffering from basic food allergies). A close friend suffers from many food allergies and she swears by this recipe – It has been tried and tested and is very delicious!

Chili con Carne

Ingredients:
2 lbs ground beef or lamb
2 large onions, chopped
5 cloves garlic chopped
1 chili pepper, chopped
5 tbsp vegetable oil
3 (14.5 ounce) cans whole peeled tomatoes with liquid, chopped
2 (15.25 ounce) cans red kidney beans (rinsed & drained)
Grated chedder cheese (optional)
Sourcream (optional)

Mix the following seasonings and set aside:
1½ tsp salt
1 tsp ground pepper
1½ tbsp ground cumin
1½ tbsp chili powder
2 tbsp paprika
2 tbsp dried oregano
2 cinnamon sticks
6 whole cloves


Directions:

  • In a medium sized stockpot, heat oil over medium heat - Sauté onion, chili pepper & garlic until soft.
  • Add ground beef (or Lamb). Cook & stir until meat is browned. Strain off excess fat.
  • Pour in tomatoes with liquid and add all the seasonings. Cover & simmer for 45 minutes
  • Stir in kidney beans and cook another 15 minutes
  • Remove cinnamon sticks before serving
  • Top with your favorite topping i.e. grated cheese or sour cream
